SPLAT Sandwiches

Sweet potato, lettuce, avocado and tomato sandwich - a vegetarian take on the classic BLT sandwich.

Ingredients

  • 8 slices whole grain bread, toasted
  • 2 cups sweet potatoes, sliced & roasted
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup lettuce or spinach*
  • 2 avocados, smashed*
  • 1 tomato, sliced
  • salt & pepper, optional to taste
  • mayonnaise, optional to taste
  • sliced onion, optional

Instructions

  1. Preheat oven to 400 degrees.  Slice sweet potato into 1/4 inch rounds and toss with olive oil, salt and pepper.  Arrange the sweet potato rounds onto baking sheet and bake until slightly browned (about 7-8 minutes).  Flip over the sweet potatoes at this point or midway through baking and bake for an additional 6-7 minutes.  The sweet potatoes will take more time to cook if they are cut thicker and less time if they are cut thinner.  

  2. While the sweet potato rounds are roasting in the oven, toast the bread, slice the tomato and mash/smash up the avocado. If you are adding any optional ingredients, now would also be the time to prepare them.

  3. Once the sweet potatoes have finished roasting, you can start the assembly of the sandwich. The first thing I do is spread mayo on the bread.  Next, to one of the bread slices, I add about 1/4 cup of the sweet potato rounds (about 4-6 rounds), 1/4 cup of the lettuce/spinach (or however much you see fit), tomato slice or slices depending on how big the tomato you sliced was, and the onions. At this point, on the other slice of bread, I add the smashed avocado, a bit of salt and pepper, and finally complete the sandwich by placing this slice on top of what was already assembled.  

Notes:

  1. The amounts listed will yield approximately 4 sandwiches.  You can adjust the amounts to your liking, but also keep in mind that you can prepare everything up to the point of assembly and have SPLAT's leftover too.

  2. You can use any greens in the place of lettuce or spinach. I use spinach because spinach is a staple in my refrigerator. Use whatever you have available or prefer.

  3. This sandwich can easily be made vegan by using a vegan mayonnaise or by omitting this ingredient altogether.

  4. Unless you are making all 4 sandwiches at once, I would only mash up the amount of avocado that you would like to use. I find that half of an avocado is the perfect amount for 1 sandwich.  You also do not have to mash the avocado if you prefer it in slices, however, I find that in order to keep the avocado on the sandwich when eating and to get a little bit of avocado goodness in every bite that mashing up the avocado is the way to go.
